Meat & Veggie Skewers

Ingredients (serves 4):

• 500g chicken breast or beef sirloin, cut into 1-inch cubes

• 1 red capsicum, cut into chunks

• 1 zucchini, sliced into thick rounds

• 1 red onion, cut into wedges

• 1 cup cherry tomatoes

• 2 tablespoons olive oil

• 2 cloves garlic, minced

• 1 teaspoon smoked paprika

• 1 teaspoon dried oregano or thyme

• Juice of 1 lemon

• Salt and pepper to taste

• Wooden or metal skewers (if wooden, soak in water 30 mins before)

Instructions:

1. Marinate the meat: In a bowl, combine olive oil, garlic, paprika, oregano, lemon juice, salt, and pepper. Add the meat cubes and toss to coat. Marinate for at least 30 minutes (or up to 4 hours in fridge).

2. Assemble skewers: Thread meat and veggies alternately onto skewers — chicken/beef, capsicum, zucchini, onion, cherry tomato, repeat.

3. Cook:

• Grill: Preheat grill to medium-high and cook skewers for 10–15 minutes, turning occasionally, until meat is cooked through and veggies are tender.

• Oven: Preheat oven to 200°C. Place skewers on a lined baking tray and roast for 15–20 minutes, turning halfway through.

4. Serve: With a side salad, quinoa, or rice.

Tips:

• For extra flavor, add a sprinkle of chili flakes or fresh herbs before serving.

• Swap veggies as you like—mushrooms, eggplant, or asparagus work well too.

• For lamb or pork, adjust cooking time slightly depending on thickness.
