GF + DF Chocolate Chip Cookies

Soft, chewy, and totally addictive

Ingredients

Dry

• 1½ cups almond meal (or fine almond flour)

• ½ cup GF plain flour (or GF oat flour for extra chew).

• ½ tsp baking soda

• ¼ tsp sea salt

Wet

• ⅓ cup coconut sugar (or brown sugar)

• ¼ cup maple syrup

• ⅓ cup melted coconut oil (cooled slightly)

• 1 egg

• 1 tsp vanilla extract

Fold in

• ½–¾ cup dairy-free dark chocolate chips or chunks

(I used Pana Dark & White Baking Chocolate, Loving Earth, or any DF choc you love)

Method

1. Preheat oven to 175°C (fan 160°C). Line a tray with baking paper.

2. In a bowl, whisk together all dry ingredients.

3. In a separate bowl, whisk coconut sugar, maple syrup, coconut oil, egg and vanilla until smooth.

4. Add wet ingredients to dry and mix until a soft cookie dough forms.

5. Fold through chocolate chips.

6. Scoop tablespoons of dough onto the tray (they spread slightly).

7. Bake 10–12 minutes until edges are just golden but centres still soft.

8. Cool on tray for 5 minutes, then transfer to a rack.

They firm up as they cool — resist over-baking!
