Vegan Apple & Cinnamon Banana Bread

Ingredients

• 3 ripe bananas, mashed

• 1 medium apple, finely diced or grated (skin on is fine)

• ⅓ cup coconut sugar (or brown sugar / maple sugar)

• ¼ cup maple syrup

• ⅓ cup melted coconut oil (or olive oil)

• ¼ cup plant-based milk (almond, oat, soy)

• 1 tsp vanilla extract

Dry

• 1½ cups gluten-free or plain flour (or spelt flour)

• 1 tsp baking soda

• ½ tsp baking powder

• 1½ tsp ground cinnamon

• ¼ tsp nutmeg (optional)

• Pinch of salt

Optional add-ins

• ½ cup chopped walnuts or pecans

• ¼ cup raisins or dates

Method

1. Preheat oven to 175°C and line a loaf tin.

2. In a large bowl, mix mashed banana, apple, sugar, maple syrup, oil, milk and vanilla.

3. Add dry ingredients and gently fold until just combined (don’t overmix).

4. Fold in nuts or dried fruit if using.

5. Pour into loaf tin. Sprinkle extra cinnamon + coconut sugar on top if you like.

6. Bake 45–55 minutes, until a skewer comes out mostly clean.

7. Cool before slicing (if you can resist!)

Little swaps & tips

Gluten-free: Use a GF plain flour blend + 1 tbsp extra milk

Oil-free: Swap oil for extra mashed banana or apple purée

Extra protein: Add 2–3 tbsp hemp seeds or a scoop of vanilla plant protein
