Fresh Chimichurri
Bright, herby, and packed with flavour. Chimichurri is one of those staples that instantly elevates a meal.
Spoon it over grilled meats, roasted veggies, eggs, or even sourdough.
Simple ingredients, big nourishment.
Ingredients:
1 cup fresh parsley, finely chopped
2–3 cloves garlic, minced
2 tbsp fresh oregano (or 1 tbsp dried)
½ cup extra virgin olive oil
2 tbsp red wine vinegar (or lemon juice)
½ tsp chili flakes (optional)
Salt + pepper, to taste
Method:
Finely chop parsley and garlic.
Add to a bowl with oregano and chili flakes.
Pour in olive oil and vinegar.
Stir to combine and season to taste.
Let sit for 10–15 minutes before serving for best flavour.
