Fresh Chimichurri

Bright, herby, and packed with flavour. Chimichurri is one of those staples that instantly elevates a meal.

Spoon it over grilled meats, roasted veggies, eggs, or even sourdough.

Simple ingredients, big nourishment.

Ingredients:

  • 1 cup fresh parsley, finely chopped

  • 2–3 cloves garlic, minced

  • 2 tbsp fresh oregano (or 1 tbsp dried)

  • ½ cup extra virgin olive oil

  • 2 tbsp red wine vinegar (or lemon juice)

  • ½ tsp chili flakes (optional)

  • Salt + pepper, to taste

Method:

  1. Finely chop parsley and garlic.

  2. Add to a bowl with oregano and chili flakes.

  3. Pour in olive oil and vinegar.

  4. Stir to combine and season to taste.

  5. Let sit for 10–15 minutes before serving for best flavour.
